no fishy, MEATLOAF!
I've made this twice for me and The Boy and it's super-yum. Nother adapted recipe - tastes like mom-made :)
This loaf is good for two meals each for two people. Shrink by half for no leftovers for two people; we like it so much I've doubled it so we have extra leftovers.
One and a half to two pounds ground chuck. I usually do half chuck, half leaner ground beef, but all chuck is fine too.
1 half large onion or whole small onion, diced finely
1 egg
approx. 1/2 cup bread crumbs - up to a cup is okay: more bread crumbs = less soft loaf
bit parsley if you have it around
salt and pepper
1 glove garlic OR teaspoon garlic powder
about 1 tablespoon Worcestershire sauce
Splash Tabasco sauce - maybe half a teaspoon
Preheat oven to 350
dice onion, garlic, and parsley all up fine.
Dump meat and everything else into large bowl. Meat first, then parsley, salt and pepper to taste (around a teaspoon each is normal), onion, garlic, knead all that around with your hands. Then put in egg and bread crumbs, mush all that around with your hands. Then Worcestershire and Tabasco, same deal.
Once it's all smushed up good, put it in a loaf pan and bake for around 40 minutes. If you don't have a loaf pan you can use a wide one and just shape it into a loaf - it stays in shape quite nicely. Cut into the middle to check doneness - if it is not pink it is fine.
For Mike I put tomato sauce on, for me I like it plain.
With 4 - 5 pounds of meat we get a good three solid days of leftovers, which is good cuz Mike likes meatloaf sandwiches :)
