I'm somewhere between medium and medium rare. I like it pinker/redder than medium but medium rare is often just too raw for me.

I can't stomach medium well or well. I think it just ruins the taste.

I agree. Depends on my mood, but I'm usually on the medium rare side of the fence. Depends on what kind of steakhouse I'm in. If it's a high scale one, I'll go medium rare, if it's a chain store or other middle of the road steak house then I tend to go medium.

Technically speaking, rare is how steak is "supposed" to be prepared. I just can't stand COLD red meat. A couple places here have a level below rare called "blood rare" which is about a minute to a minute an a half searing on each side and then on the plate.

Ugh, no thanks. It's gotta at least be partially cooked through and warm. :)

like andrea, I'm inbetween.

Usually I order "rare to medium rare", but it depends on the cut.... and on where I'm ordering it. :)
Some places' meat I trust more than others.

That's pretty much the case for all red meats, though.... duck, buffalo, beef...etc.... rare to medium rare.

hmm. i've never had duck that wasn't welldone. but most of the duck i've had has been smoked or in chinese food.

so i find duck and goose to be similar meats, would you also cook goose to rare/med rare?

Well, I should clarify that duck BREAST is best grilled rare.... leg meat is best confit. (imo, of course).

Never tried goose that way.... not sure how it would work.

all the way, although from the guidelines nate put up, medium rare is alright.

basically i like it seared on the outside and warmed up throughout and that's good enough for me :)

I used to LOVE my steak rare (med rare if i had to) but in the past year or so i've found i can't stomach it. It gives me awful indigestion...so now i have to order it med rare to med. But i agree that it doesn't taste as nice.

Well...one of the neat things about steak is that the nasty germs will be on the *outside* of the thing... So, as long as it's seared, there's no danger.
